It seems to be easy enough to create Android and IOS apps on Xamarin in Visual Studio, but I can't see how to create OSX apps. What Chris said. I recently went through this process with a research application I maintain. It had been primarily a windows app. The process took almost 4 months, but both versions were better for it as I took time to remove a lot of legacy code and create a handful of shared libraries that manage all business logic. Then, all I had to do was create the 'windowing' part -- and that connect it to my libraries.
For sure, if you come from the windows side, you'll find working with AppKit and some of the Apple UI choices interested (at least, I did and still do) -- but the folks on this list were super helpful when I had questions and Mac components have only gotten better during the now, 2 years that I've been using it.

If you have a background in Windows tech (like WPF) then AppKit will seem down right primitive in places. But given a big enough hammer, you can make it work.
I have the same question. I understand that I can use Xamarin.MAC for native MacOS development, but what about cross-platform desktop applications? I suppose that I can create set Views in Xamarin.Mac and set of Views for Windows (with classic WPF) for Windows desktop? And I can reuse ViewModels, right? Are there any simple examples or templates for that scenario? I am still new to Xamarin and lost a little.
Xamarin Forms is not intended for desktop as far as I understand (UWP is not a solution).

Xamarin.Forms support is coming to macOS:

however, it's scheduled for Q2 this year (it's in preview right now).
But writing against Cocoa directly in c# is alive and well.
It's what powers parts of Xamarin Studio, Xamarin Profiler, Xamarin Workbooks, and pretty much every other Xamarin product on macOS to begin with.
As you noted, desktop development isn't as much of a focus on the website as mobile development, but that is a function on market size more than anything. Desktop development on macOS is not as wide scale as mobile development, but the use case is very important for those who need that platform.
